These grain free muffins are a protein-rich snack that is low in sugar (sweetened with stevia and honey). Make it your own by adding rasins, goji berries, blueberries, etc. I have found it to be an easy recipe that I use regularly.
Preheat oven to 325 deg F.
Makes 10-12 muffins
In one bowl combine dry ingredients:
3/4 cup shredded coconut (unsweetened)
3/4 cup almond meal/flour
1/4 tsp baking soda
1/4 tsp xanthan gum
1/2 tsp baking powder
1/8 tsp salt
1/4 tsp cinnamon powder (use 1/2 a tsp if you really like cinnamon!)
1/8 tsp ginger powder
*Sift these the ingredients or just make sure there are no clumps of almond meal
In a second large bowl combine wet ingredients:
2 eggs-room temp (you can run them under warm water if you take them out of the fridge)
3 tbsp softened butter or coconut oil
1/2 cup almond butter
1/4 cup honey
7 drops liquid stevia (this is optional, it just adds a little extra hint of sweetness)
1/2 tsp vanilla extract
1/3 cup water (add additional water if using dried fruit)
*Mix with well with an electric mixer
While mixer is on a low setting, slowly add the dry ingredients to the wet and then mix thoroughly. Let this mixture stand for about 5 min. (this is usually when I remember to turn on my oven).
Line a muffin tin with muffin papers and carefully scoop the batter in into the cups. Fill them about 3/4 of the way . This recipe makes 10-12 muffins.
Bake time = ~25 min. Bake at 325 F.
They are lightly browned on top when they are done.
Remove from oven and allow to cool for 10 min. Enjoy!!
