However, I don't need any more sugar than I already eat.
This hot chocolate recipe will please and satisfy. It is made extra rich with the addition of coconut milk or coconut oil, and it is sweetened with stevia!
Ingredients for 2-3 servings:
*adjust measurements to your taste, these are estimates.
24oz unsweetened milk or milk alternative of choice, I like almond milk
1 Tablespoon of cacao powder (organic & sustainable if possible)
1/8 teaspoon ceylon cinnamon powder
1 teaspoon virgin coconut oil (or a few tablespoons of pure coconut milk)
14 drops of liquid stevia (trader joes sells this)a dash of salt
In a blender or using a hand mixer combine milk of choice, cacao powder and cinnamon, briefly blend.
In a saucepan on medium heat add the blended milk and allow to warm to a toasty drinkable temp.*Do not boil.
Stir in coconut oil or pure coconut milk so it melts and mixes.
Add salt and liquid stevia.
Taste and adjust as necessary. You can also spike it with some ginger or a dash of cayenne if you like the spice!
